Overview
Due Cigni knives of the Professional Boning Knife series are intended for professional chefs. The blade of this model is made of nitrogen-free stainless steel X50CrMoV15N, thanks to which it maintains the sharpness of the cutting edge for a long time and does not require special care. Adding nitrogen to the steel allows the knife to better withstand contact with water. Blades with the designation Semiflex are more flexible, suitable for separating fillets from the bone. Knives with hard blades from this series easily separate fillets from the bone from the spine. The handle is made of environmentally resistant nylon with an anti-slip effect.
